Originally rustled up in Watergate Bay Hotel’s Ocean Room bar, this bright and zesty recipe offers a Cornish take on the mojito, celebrating two favourite land&water ingredients: lime and mint.
While you can recreate it with any gin of your choice, the recipe below showcases the limited edition Watergate Bay Hotel gin made by Loveday – flavour-obsessed, female-founded spirit distillers on an eternal search for vibrant new things to sip on.

Combining the lively zing of grapefruit and lemon verbena with the creamy floral notes of elderflower and coastal chamomile, this special gin captures that distinctive sensation of feeling both energised and relaxed among the elements.

Based in Penryn, south Cornwall, Loveday hand-distill their spirits in small batches to preserve the seasonal freshness of their ingredients. “We never use artificial flavours or sweeteners,” explains Loveday co-founder and director, Daisy Hillier. “We draw on the natural landscapes surrounding us, using Cornish spring water and locally foraged botanicals to create clean, bright flavours.”
Choose from two delicious riffs on our cocktail – one lighter, the other longer and laced with crushed ice.

A LAND&WATER COCKTAIL
35ml Watergate Bay x Loveday gin (or your favourite gin)
20ml lime juice
10ml lime cordial
15ml sugar syrup
6 mint leaves

Shake all the ingredients together with ice in a cocktail shaker.

Strain into a cocktail glass – a Nick and Nora glass would be perfect.

Garnish with a twist of lime and a mint leaf.
A LAND&WATER LONG COCKTAIL
35ml Watergate Bay x Loveday gin (or your favourite gin)
4 lime wedges
20ml lime juice
20ml sugar syrup
10 mint leaves

Muddle the lime wedges in the bottom of a glass to release the juice.

Add all ingredients to a tall glass and mix with crushed ice.

Crown with more crushed ice and mix again.

Garnish with a mint sprig and a lime wedge.
